Summer of Cold Noodle: Somen Salad

Though this noodle dish features the Japanese somen noodle, I think the actual recipe may be more Hawaiian in nature.

Somen is your basic wheat flour noodle, and though it may not be as healthy as it's cousin soba, it is still tasty!

This "salad" employs not only cold somen noodles, but also green onion, lettuce, sliced ham (I used deli ham), sliced cooked egg, sesame seeds and kamaboko (fish cake).

I used the traditional pink & white half moon type of fish cake, but if that's not available, you could also use some imitation crab.

Just mix it all together...

And enjoy with some dressing made of oil (I used olive), soy sauce, vinegar and sugar. You can find plenty of somen salad dressing recipes online, though I think it's mostly "to taste".

Anyway, this was my first time making one of Sak's hometown favorites, and I think it came out pretty well! Next time I may be less healthy and buy the iceberg lettuce though, as green leaf was a little overpowering. Also, I would probably try and "California-ize" it a bit by adding some avocado. Everything is better with avocado!
